Despite its name, the dish does not contain any actual Rolex watches but instead refers to the combination of rolled eggs (rol) and chapati (ex), which are the main components of this delicious and satisfying treat. Let’s delve into the essence of Ugandan Rolex and how it is prepared.

Ingredients:

  • Eggs
  • Chapati (thin flatbread)
  • Onion, finely chopped
  • Tomato, diced
  • Green bell pepper, diced
  • Salt and pepper to taste
  • Cooking oil

Instructions:

  1. Prepare the Chapati:
    • In a bowl, combine wheat flour, water, and a pinch of salt. Knead the mixture until it forms a smooth dough.
    • Divide the dough into small portions and roll each portion into a thin circle using a rolling pin.
    • Heat a frying pan or skillet over medium heat and cook each chapati for a few minutes on each side until lightly browned. Set aside.
  2. Prepare the Filling:
    • In a bowl, crack the eggs and whisk them together until well beaten. Season with salt and pepper.
    • Heat a small amount of oil in a non-stick pan over medium heat.
    • Add the finely chopped onions, diced tomatoes, and diced green bell pepper to the pan. Sauté until the vegetables are softened.
    • Pour the beaten eggs into the pan with the sautéed vegetables. Stir gently to scramble the eggs, mixing them with the vegetables until fully cooked. Season with salt and pepper to taste.
  3. Assemble the Ugandan Rolex:
    • Take a chapati and place a generous portion of the egg and vegetable mixture in the center.
    • Roll the chapati tightly, enclosing the filling inside like a burrito.
    • Repeat the process for the remaining chapatis and filling.
  4. Serve and Enjoy:
    • Once the Ugandan Rolexes are assembled, they can be served immediately.
    • They are commonly enjoyed as a handheld street food snack, but they can also be served as a light meal or breakfast option.
    • For added flavor, you can serve the Rolex with condiments such as ketchup, chili sauce, or pickles.

The Ugandan Rolex encapsulates the flavors, simplicity, and convenience of street food in Uganda. It is a versatile dish that can be customized according to personal preferences by adding other ingredients such as shredded cabbage, carrots, or cooked minced meat.
