Tom Yum, a quintessential Thai soup, offers a symphony of flavors that perfectly balance sour, spicy, and savory notes. Often referred to as Tom Yum Goong when shrimp is the star ingredient, this dish is a staple in Thai households and a beloved choice in Thai restaurants worldwide. Let’s explore how to create this aromatic and vibrant soup in your own kitchen.

Ingredients

To prepare an authentic Tom Yum soup, you’ll need the following ingredients:

  • Protein: 200 grams of shrimp (peeled and deveined)
  • Broth: 4 cups of chicken or vegetable stock
  • Aromatics: 3-4 kaffir lime leaves (torn into pieces), 2-3 stalks of lemongrass (cut into 1-inch pieces and lightly smashed), 3-4 slices of galangal
  • Vegetables: 1 cup of mushrooms (halved or quartered)
  • Flavorings: 2-3 Thai bird’s eye chilies (smashed), 3 tablespoons of fish sauce, 2 tablespoons of lime juice, 1-2 teaspoons of sugar
  • Garnish: Fresh cilantro leaves, chopped

Preparation Steps

Prepare the Broth:

    • Bring the chicken or vegetable stock to a boil in a medium-sized pot. Add the lemongrass, galangal, and kaffir lime leaves. Let it simmer for about 5 minutes to allow the aromatics to infuse the broth.

    Add Vegetables:

      • Add the mushrooms, and if using, the tomato and onion. Let them cook in the broth for about 3-4 minutes until they begin to soften.

      Season the Soup:

        • Add the fish sauce, lime juice, and sugar. Stir well to ensure the flavors are evenly distributed. Taste and adjust the seasoning to your preference, balancing the sourness, saltiness, and sweetness.

        Cook the Shrimp:

          • Add the shrimp to the pot. Simmer until the shrimp turn pink and are cooked through, which should take about 2-3 minutes.

          Final Touch:

            • Smash the Thai bird’s eye chilies and add them to the soup. This will release their heat and flavor. For a milder version, you can add the chilies whole.

            Serve:

              • Ladle the soup into bowls, ensuring each serving gets a good mix of shrimp, vegetables, and broth. Garnish with fresh cilantro leaves.
