Quiche, with its buttery crust and rich, custard-like filling, is a versatile and comforting dish that never fails to satisfy. If you’re a fan of the combination of flavors in a quiche, then you’ll love this delectable spinach quiche recipe. Packed with nutrient-rich spinach and complemented by a blend of savory ingredients, this quiche is perfect for breakfast, brunch, or a light dinner. Ingredients:

For the crust:

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, diced
  • 3-4 tablespoons ice water

For the filling:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups fresh spinach leaves, chopped
  • 4 large eggs
  • 1 cup milk
  • ½ cup grated Gruyere or Swiss cheese
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Pinch of nutmeg (optional)

Instructions:

  1. Prepare the Crust:
    In a food processor, combine the flour and salt. Add the cold diced butter and pulse until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, and pulse until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat the Oven:
    Preheat your oven to 375°F (190°C).
  3. Roll out the Crust:
    On a lightly floured surface, roll out the chilled dough into a circle, slightly larger than your quiche pan. Carefully transfer the rolled-out dough to the greased quiche pan and press it gently into the bottom and sides. Trim any excess dough hanging over the edges.
  4. Sauté the Spinach and Onion:
    In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent. Add the chopped spinach leaves and cook until wilted. Remove from heat and set aside to cool.
  5. Prepare the Filling:
    In a mixing bowl, whisk together the eggs and milk until well combined. Add the grated Gruyere or Swiss cheese, grated Parmesan cheese, salt, pepper, and a pinch of nutmeg (if desired). Mix well.
  6. Assemble and Bake the Quiche:
    Spread the sautéed spinach and onion mixture evenly over the bottom of the prepared crust. Pour the egg and cheese mixture over the spinach. Gently shake the quiche pan to distribute the filling evenly. Place the pan in the preheated oven and bake for 35-40 minutes, or until the quiche is set and the top is golden brown.
  7. Cool, Slice, and Serve:
    Remove the quiche from the oven and let it cool for a few minutes. Use a sharp knife to slice it into wedges or squares. Serve warm or at room temperature, and enjoy the delightful flavors of your homemade spinach quiche.
