Homemade Rusks for Breakfast or Tea

Homemade rusks hold a special place in South African kitchens. They are crunchy, filling, and perfect for dipping into tea or coffee. Unlike store-bought versions, homemade rusks give you full control over ingredients, sweetness, and texture. They also last well, making them ideal for busy mornings or relaxed tea breaks. Homemade rusks cost less over time. They use basic pantry ingredients. You can reduce sugar, add seeds, or choose whole wheat flour. Freshly baked rusks also have better flavor and a sturdier crunch once dried properly.

Basic Ingredients for Classic Rusks
1 kg self-raising flour
250 g butter
250 g sugar
2 large eggs
500 ml buttermilk
5 ml salt

How to Prepare the Dough
Preheat the oven to 180°C.
Rub the butter into the flour and salt until crumbly.
Add sugar and mix well.
Beat the eggs and buttermilk together.
Pour the liquid into the dry ingredients.
Mix until a soft dough forms. Do not overwork it.

Baking the Rusks
Grease a large baking tray.
Press the dough evenly into the tray.
Bake for 45 to 50 minutes until firm and lightly golden.
Remove from the oven and allow to cool slightly.
Cut into even fingers or squares while still warm.

Drying for the Perfect Crunch
Reduce the oven temperature to 100°C.
Place the cut rusks back onto the tray with space between them.
Dry for 4 to 6 hours, turning once halfway through.
The rusks should be completely dry and crisp.

Popular Flavor Variations
Add sunflower seeds, pumpkin seeds, or oats for texture.
Use whole wheat flour for a heartier rusk.
Add grated coconut or chopped nuts for a richer taste.
Include a teaspoon of aniseed for a traditional twist.

Storage Tips
Allow rusks to cool completely before storing.
Keep them in an airtight container.
Store in a cool, dry place.
Properly dried rusks can last several weeks.

Serve rusks with strong black tea or freshly brewed coffee. They work well as a quick breakfast on the go. They also make thoughtful homemade gifts when packed neatly. Homemade rusks bring comfort and practicality together. They suit slow mornings and busy days alike. With simple ingredients and a little patience, you get a reliable, satisfying snack that fits perfectly into breakfast or tea time routines.
