How To Make Chicken Peri-Peri The South African Way

Chicken Peri-Peri, also known as Piri-Piri, is a beloved dish originating from the vibrant culinary landscape of South Africa. Bursting with flavor and heat, this spicy chicken dish is a staple in South African cuisine, offering a tantalizing fusion of African, Portuguese, and indigenous flavors. Here’s how to master Chicken Peri-Peri the South African way:

Ingredients:

  • 4 chicken thighs, skin-on and bone-in
  • 4 chicken drumsticks
  • 4 cloves of garlic, minced
  • 2 red chili peppers, finely chopped (adjust to taste)
  • 1 lemon, juiced
  • 2 tablespoons of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of dried oregano
  • 1 teaspoon of ground cumin
  • Salt and black pepper to taste
  • Fresh parsley or coriander for garnish (optional)

Instructions:

  1. Marinate the Chicken: In a large bowl, combine the minced garlic, chopped chili peppers, lemon juice, olive oil, paprika, dried oregano, ground cumin, salt, and black pepper. Mix well to create the peri-peri marinade. Add the chicken thighs and drumsticks to the marinade, ensuring they are evenly coated. Cover the bowl and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to infuse.
  2. Preheat the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, wait until the coals are evenly hot and glowing.
  3. Grill the Chicken: Remove the chicken from the marinade and shake off any excess. Place the chicken pieces on the grill, skin-side down, and cook for approximately 5-7 minutes per side, or until the chicken is cooked through and has a charred, slightly crispy exterior. Baste the chicken with any remaining marinade while grilling for an extra burst of flavor.
  4. Check for Doneness: To ensure the chicken is fully cooked, insert a meat thermometer into the thickest part of the chicken thighs and drumsticks. The internal temperature should reach 75°C (165°F).
  5. Serve and Enjoy: Once the chicken is cooked to perfection, transfer it to a serving platter and garnish with fresh parsley or coriander, if desired. Serve hot with your favorite sides, such as rice, grilled vegetables, or crusty bread.

Tips for Success:

  • Adjust the amount of chili peppers according to your spice tolerance. For a milder peri-peri sauce, remove the seeds from the chili peppers before chopping.
  • For extra flavor, you can add other herbs and spices to the marinade, such as thyme, rosemary, or smoked paprika.
  • If you prefer, you can also bake the marinated chicken in the oven at 200°C (400°F) for approximately 25-30 minutes, or until cooked through.
